Prepare Today Homemade-Canning Maple Flavored Pancake Syrup

I have a tip for you, don't buy maple syrup at the grocery store (unless it is the real thing), it is a rip off!!  You are paying for sugar and water, and it is so easy to make.  I used to make syrup on a need-to-use basis, but it kept me from making fun breakfast items because I didn't want to make the syrup right then.  I found a great recipe for canning maple syrup, it tastes great, and doesn't crystallize!!

First you are going to boil 2 C of sugar, 1 C water, and 2 T Karo syrup.  
Sorry it is blurry but I was hurrying :)
 When is comes to a boil you will add 1/2 t maple flavoring and stir.
 Have your jars and lids ready to go (heated and clean) and using a funnel, fill to a 1/2" head space.  Wipe off the rims, add your lids and tighten your rings.
 Process pints for 7 minutes in a boiling water bath canner.

So pretty and so easy to grab one off the shelf for breakfast.  I keep them in the fridge once opened with the canning ring to close them.  The recipe below is for a regular batch of syrup, but I needed enough for 10 pint jars so I multiplied by 7 to get enough syrup.


Bottled Maple Syrup

2 C white sugar
1 C water
2 T Karo syrup
1/2 t maple flavoring
Bring the sugars and water to a boil.  Add maple flavoring and stir.  Pour into clean, sterilized jars, leaving about 1/2" head space.  Wipe the rims and place lids on.  Process in a boiling water bath canner for pints 7 minutes. Remember to start your timing when the water has started boiling again. Remove jars to a cooking rack or towel and let cool before storing.  

Now you have syrup ready to go!  If you made up a pancake or waffle mix you could have your kids make you breakfast :)

  5. Here is some other info I found when canning syrup. The link in the post is where I found the original recipe. http://forums.gardenweb.com/forums/load/harvest/msg0212390231060.html If the sugar content is high enough it is safe to water bath.

    1. Yes, we all know this isn't maple syrup from a tree. Most people don't have access to fresh maple syrup, or are able to afford to buy it all the time. This is imitation maple syrup and I think that is understood when you see the recipe. It's just like using vanilla flavoring in baking. Most people know that it is imitation vanilla flavoring and not real vanilla bean. So thank you for your comment and for clarifying it to everyone who didn't know this wasn't real maple syrup.

  10. You should change the title, it's misleading. If "imitation" or "faux" were added those of us looking to can real maple syrup wouldn't waste our time.

    1. I don't feel it is misleading at all! In the first sentence in the post it states "I have a tip for you, don't buy maple syrup at the grocery store (unless it is the real thing), it is a rip off!!" I am in no way saying this is real maple syrup. Most people don't use real maple syrup because of cost, and I think it is understood when you start reading the post that the recipe is for sugar and water syrup. The post is not so long winded that you spent a long time reading it. I am sorry you "wasted your time" reading my blog...but to each his own on what they call maple syrup. I have never seen maple syrup a the grocery store labeled "faux". The real maple syrup marketers are the ones putting REAL maple syrup on their products. The general public knows which is which and I in no way stated this was real maple syrup.

    2. Seriously.....if you are looking for a "real maple syrup recipe" you are wasting your time anyway. I guess some people don't know that it comes from a tree and that you cannot make it from ingredients. Anything that you are making as maple syrup will obviously be "imitation." Anyway....thanks so much for the post! I really appreciate the recipe and think it is great! I, too, cringe just reading the ingredients on syrup bottles and cannot hardly stand to eat it knowing(or not knowing) what is in there.

  12. Do you use Dark Karo Syrup? How does it get so dark? Thanks....probably a dumb question from a newbie.

    1. I used regular light karo syrup. It gets dark when you add in the maple flavoring. Hope that helps :)

    1. I have kept mine in the fridge for several weeks. It is basically sugar water and I don't know the exact expiration time, but I assume it's pretty long. Just watch for signs of an off smell or taste, that would be my expiration date :)

  15. I'm new to canning. You said you made 10 pints. did you have to keep them all in the fridge? Can you substitute when a recipe calls for real maple syrup?

    1. They only went in the fridge after I opened one to use it. But I don't think they have to go in the fridge. The unopened processed jars stayed in my pantry on the shelf. When a recipe calls for maple syrup you'll need the real deal. I hope that helps!

    3. I would say use it within two years. But as with all expiration dates it's all subjective. I've eaten canned foods that were years past their best by date.

    A tip for you (from an old lady of 50) don't waste precious moments of you life replying to stupid, creepy comments. Ignore them--they obviously have no life, so they want to "vent" and feel important and pick at yours. You are doing something and they are jealous.

    The first thing I do is scroll down to the recipe. I'm sure they could try that to. If they don't like the recipe...move on! Da!

    Thanks for posting. I plan to make a big batch in the next three weeks. Plan to multiply it about 4.5 to 5 times to make 7 pints. Got any more recipes for canning???

  17. I know this is an old post but im excited to try this. We dont have the resources or time to tap trees and make "real" maple syrup. I mady pancake syrup last night and used vanilla and a tablespoon of butter. And it was delicious buttery syrup. So today it got me thinking can i can this? So i googled and found your blog. I am pretty excited to try this but the difference im going ro do is try a small batch on breakfast night of this syrup bit add 1/2tsp butter extract :D hope it turns out yay!
